The cassatella is the jewel in the crown of Agira's cooking traditions. It is a sweet pastry with ancient origins, it is very labour intensive and requires many steps that are carefully guarded and passed down from generation to generation. It is entirely made by hand and despite being very laborious, the old recipe is definitely worth a try. Cassatelle are typical of Enna, they are crescent shaped and prepared from a type of short crust pastry, soft and golden with a light dusting of icing sugar and filled with a delicious mixture of cocoa, chopped almonds, chickpea flour, sugar, dried lemon zest and an optional pinch of cinnamon. The kitchen laboratory can accommodate up to 6 people at a time; larger groups can be divided up so that everyone can participate.
